Serves: 10-20 Prep time: 30 minutes Marinate time: 10 hours Cook time: 6 hours Ingredients: 1 pork shoulder, large cubes 2 racks side ribs, broken into 2 bones Marinade 2 tablespoons pork lard 3 cooking onions, chopped 1 bulb garlic, sliced Toasted Spice Mix 1 tablespoon coriander 1 tablespoon oregano 3 sticks of Mexican cinnamon 1/2 teaspoon cloves 1 tablespoon cumin 1 tablespoon peppercorns 1/3 cup apple cider vinegar 1.5 cups orange juice 1.5 cups achiote paste 7 bay leaves 3 banana leaves Method: 1. Caramelize onions and garlic in lard and add to a blender with toasted spices. Top with achiote, vinegar and orange juice. Blend until smooth. 2. Line a large baking vessel with banana leaves and toss in the pork. Massage in the marinade and leave overnight. 3. Wrap with parchment and foil, bake at 350F for 6 hours or until the meat is tender. 4. Break up the meat and remove the bones while gently mixing the sauce into smaller pieces. 5. In a small sauce pan, gently warm local whole milk. 2. In a separate pot, melt butter and add flour.
