High Protein Creamy Leek, Potato & White Bean Soup 🥔🥣 Ingredients (Serves 3-4): • 1 tbsp olive oil or butter • 2 large leeks, cleaned and sliced • 2 garlic cloves, chopped • 400g potatoes, peeled and diced • 1 tin (400g) cannellini or butter beans, drained and rinsed • 700ml vegetable or chicken stock • 2 tbsp cottage cheese or Greek yogurt (optional, stirred in at the end) • Salt and black pepper to taste • Optional: a few fresh thyme leaves or a pinch of nutmeg Protein boost: ~17–20g per portion (beans + optional yogurt/cottage cheese) 1. Heat the olive oil in a large pan. Add the leeks and garlic, cook gently for 6-8 minutes until softened. 2. Add the potatoes and beans, stir well, then pour in the stock. 3. Simmer for 15-20 minutes until everything is soft. 4. Blend until completely smooth. 5. Stir in cottage cheese or Greek yogurt (if using) and blend again for extra creaminess. 6. Today is the 1st of May, which means it’s #postyourpill and I’m 4 months in to my new medication, so I wanted to give an update on how it’s going. I’m so grateful that these pills have given me the lift I needed to climb out of a dark, scary place - to lift my head up and fully engage with everything else I do to support my mental health, such as exercise, nature, meditation, staying alcohol-free, but also to really live and enjoy my life. Sometimes a little extra help is what makes the difference. And that’s not a weakness. It’s a strength. To whoever needs to hear this today: future you will thank you for getting the help you need and deserve. Whether that’s medication, therapy, or simply opening up to someone - don’t let stigma be the reason you don’t reach out. If you feel you can, join me and #postyourpill to end medication stigma. SOBBING! My all-time favourite childhood movie 🥹 Miss Honey was the reason I became a primary school teacher! Growing up, I would tell everyone “I want to be Miss Honey when I grow up”.
